Menu # 2 has been created by a chef who spent most of his time in Sydney working at Bathers Pavilion in Balmoral before moving to the central coast where he continued to work in fine dining restaurants. 

After travelling and working through Europe, he returned to Australia where he worked as Head Chef for a leading catering company before returning to small fine dining restaurants. He is now available in the Hunter Valley providing his food and skills through private in-house chef catering.

With a seven course degustation and luxury sommelier service, this menu is a modern Australian experience for your private dining event.

Seven course degustation menu
  • Beetroot Carpaccio, shaved baby radish, labneh, citrus, quinoa, walnut vinaigrette, gorged garden herbs

  • Cheese souffle’, pear and pickled cauliflower in chardonnay, petit herbs, manuka honey and truffle dressing
  • Pumpkin and thyme risotto, aged parmesan, chives, truffle, brown butter
  • Torched kingfish in caramelised palm sugar and dashi stock, long shallots, sea vegetables, garden herb aromats
  • Thyme roasted lamb fillet, green ratatouille, cavalo nero, kipfler potato, truffle jus
  • Hunter Valley triple cream brie, vanilla poached pear, lavosh, verjuice dressed leaves
  • ‘Strawberries & Cream’ Seasonal berries with smashed macarons, freeze dried raspberry, rose cream, flowers, white chocolate
Sommelier service

Take your in-house dining experience to the next level with your own sommelier from First Creek Wines. First Creek are one of the most awarded wineries in the region having recently won Best Chardonnay in NSW for their 2018 Reserve as well as winning the James Halliday Challenge in 2019 for Best Chardonnay in the Hunter Valley.

This menu has been paired with 5 different First Creek Premium range wines and sparkling wine is served on arrival. You’re knowledgeable sommelier will provide guests with a little background information about all of the wines served.

Guests will have the opportunity to place and order any of the wines for delivery to their homes. Price includes the supply of all glassware, sommelier set up and service for 4 hours.
